Ingredients:
Dry:
1 ½ cup buckwheat flour
1 tsp baking powder
¼ tsp baking soda
Wet:
1 ½ cup soy milk
2 tsp apple cider vinegar
2 tb agave
1 tsp vanilla extract
1 tb melted coconut oil
Other:
Oil spray/oil for cooking
Sliced banana
Coconut sugar
Instructions:
1. Add all the wet ingredients to a bowl and whisk.
2. Add all the dry ingredients to another bowl and whisk.
3. Add the wet to the dry and whisk until you get a smooth batter
4. Heat a large, non-stick frying pan to medium heat and coat with oil.
5. Pour 1/4 cup batter per pancake into frying pan. 6. Top with banana slices and
sprinkle with coconut sugar.
6. Once bubbles begin to form turn them over. Once both sides are nice golden
brown, remove from the heat.
7. Serve with your favourite toppings.
